Only you can answer the "should I" question
I'm just letting you know that if you make a 500 watt array , just connect it to the Suntie also serving the 1500 watt array , via the combiner board , the MPPT difference won't be that much between the different angles
running the inverter at 500 , 1500 or 2500 watts doesn't make much difference to the efficiency of the power produced.
The Suntie is your ONLY option , there are no sunnyboy that can do a 500 watt array (yet) and if you attempt to parallel arrays with the sunnyboy , a slight drop in output of one string will take the whole string out , on the Suntie , it would be at worst a pair of panels down in production
